Boil the water. Remove from the heat and let the eggs sit in hot water for about 10 minutes. Then take them out of the water and let them cool. Peel them and cut them in half lengthwise. Remove the yolks and mix them with the mayonnaise, mustard, pepper and salt. Mash well until a homogeneous consistency is obtained and fill each egg half with the resulting mixture. Reinvented mimosa eggs with beetroot and sprouted seeds

Basic ingredients:
- 4 eggs
- 1 small cucumber
- 1 stalk of celery
- 2 tbsp. white cheese
- 1 small beet
- 1 handful of sprouted seeds
Ingredients for the mayonnaise:
- 50 ml rapeseed oil
- 1-2 egg yolk (s)
- 2 tbsp. mustard (of your choice)
Preparation:
Cook your eggs, cool them, then shell them. Cut the beetroot into small pieces before mashing them with a fork. After obtaining a mash that is not too smooth, wash the rest of your vegetables and dice them. Then prepare the mayonnaise with the egg yolk, mustard and rapeseed oil. Season, add the cheese and a good spoonful of the beetroot puree. Put in the fridge. Meanwhile, divide the chopped vegetables among 4 plates and add the sprouted seeds. Season. Pour in a little balsamic vinegar. Cut the hard-boiled eggs in half. Collect the yolks, mash them, then add them to the beet mayo. Mix everything well. Use the preparation to garnish the whites. Now all you have to do is spread your eggs on the plates over the cut vegetables. Serve and enjoy!
Bacon Stuffed Devil Eggs

Our next stuffed egg recipe is for those of you whose meat-based meals are in order! So get yourself:
- 4 eggs
- 2 tbsp. mayonnaise
- onion
- 2-3 slices of bacon
- 1 C. sugar
- balsamic vinegar
- chopped chives for decoration
- salt and pepper
Preparation:
As usual, here too, start by putting the eggs to sweeten for about 7/8 minutes in a small saucepan filled with boiling water. At the end of this time, run them under cold water and peel them delicately. Then cut them in half and remove the yolks. As for the latter, please do not throw them away. Instead, put them in a small bowl and mash them with a fork. Then, add the mayonnaise, onion, sugar, balsamic vinegar and the bacon slices already cooked in the pan. Salt and pepper and fill the egg whites with the resulting mousse. Eggs stuffed with guacamole

- 4 hard-boiled eggs
- 1 avocado, peeled and pitted
- 1-2 tsp. mayonnaise
- 2 tbsp. lemon juice
- 1 small clove of garlic, minced
- Cayenne pepper
- parsley for decoration
- sea salt (your choice)

Preparation:
Once the eggs are cooked, peeled and cut in half, put their yolks in a small bowl and add the avocado, mayonnaise, lemon juice, garlic and cayenne pepper. Mix everything well and stuff each of your egg whites with the mixture obtained using a pastry bag. Finally garnish the mini appetizers with a little parsley. And for those of you who prefer meat, know that the given recipe will go perfectly with a few slices of bacon!
Devil's eggs stuffed with smoked salmon

These eggs stuffed with smoked salmon and mayo make delicious bites. The taste of salmon and dill goes perfectly with the creamy texture of the yolks. Served as an appetizer or snack, these devilish eggs can be made the night before.
Ingredients:
- 12 hard-boiled eggs
- 60 gr of smoked salmon
- 1/4 cup mayo
- 2 tbsp. tablespoons of fresh dill
- 3 tbsp. capers
- 2 tbsp. 1/2 teaspoon Dijon mustard
- a few drops of lemon juice
- salt and pepper
- Salmon strips for decoration
Preparation:
Cut your hard-boiled eggs in half and remove the yolks. Put these in a bowl and mash them with a fork. Add the salmon, mayonnaise, dill, capers, mustard, lemon juice. Season.
