Ingredients:

• 1/3 cup extra virgin olive oil

• 1/4 cup lime juice

• 2 tablespoons honey

Ingredients for 6 servings:

  • 30 g flour
  • 1 teaspoon of curry powder
  • 1 teaspoon of cayenne pepper
  • 4 tablespoons of butter
  • 8 mushrooms, cleaned and sliced
  • 80 g chopped onion
  • 170 ml dry white wine
  • 2 tablespoons of cognac
  • 3 tablespoons of breadcrumbs
  • 2 tablespoons of melted butter

Preparation:

Combine the flour, salt, curry powder and cayenne pepper in a large bowl. Add the Saint Jacques and mix everything well. Melt the butter in a large skillet over medium-high heat, add the shellfish to the butter and sauté until golden brown, about 4 minutes. Transfer the scallops to a plate and cover them to keep them warm. Then add the mushrooms and onions to the pan and sauté over medium-high heat for 4 minutes, stirring frequently.

Pour the dry white wine into the pan, reduce the heat slightly and simmer until the sauce is reduced by half. Remove the pan from the heat and add the cognac and the Saint Jacques. Then, preheat the oven, divide the mixture into 6 portions and put them in the oven. Combine breadcrumbs, melted butter and cheese. Pour the resulting sauce over each portion. Sprinkle with lemon juice and serve immediately!

Ingredients for 4 persons:

  • 4-5 chicory
  • 2 ripe avocados (for the dressing)

  • 250 g peeled shrimp tails
  • 2 grapefruits
  • 3 slices of smoked salmon
  • 2-3 kiwis
  • 6 c. tablespoon olive oil

Preparation:

Remove the leaves from the endive and always cut them lengthwise, remove the heart with a sharp knife, cut regularly. You can replace the chicory with spinach, arugula or lettuce leaves. Using a saw knife, cut the grapefruits, then the slices of smoked salmon. Rinse and thin the dill. Peel the kiwis and cut them into slices.

Then prepare the sauce with the lemon juice with the avocados. Pour in a little olive oil and season with salt and pepper. Finally, all you have to do is dress the avocado slices, endives, grapefruit quarters, shrimps, salmon strips and kiwis on the plates.   • 5 oranges
  • 200 ml orange juice
