• 1/3 cup extra virgin olive oil

• 1/4 cup lime juice

• 2 tablespoons honey

• 2 minced garlic cloves

• 1 teaspoon paprika

• 1/4 teaspoon cayenne pepper

• Kosher salt

• 450 g of peeled and thawed medium shrimp

Ingredients for the guacamole:

• 2 avocados

• Juice of 2 limes

• 1/2 red onion, finely chopped

• 1/2 jalapeño, finely chopped

• 2 tablespoons of freshly chopped cilantro

• Kosher salt

Preparation steps:

In a large bowl, combine the following ingredients: olive oil, lime juice, honey, garlic, paprika and cayenne pepper. Then season with salt. Stir in the shrimp and stir until well coated. Then cover and marinate in the fridge for up to 2 hours. Then transfer the shrimp to a large pan and cook over medium heat until they turn pink, 2 minutes per side. To prepare the guacamole, mash the avocado and add the lime juice, red onion, jalapeño, cilantro, seasoning generously with salt. Pour a tablespoon of guacamole over the blinis and garnish with shrimp and cilantro.

Ingredients for 6 servings:

  • 30 g flour
  • 1 teaspoon of curry powder
  • 1 teaspoon of cayenne pepper
  • 4 tablespoons of butter
  • 8 mushrooms, cleaned and sliced
  • 80 g chopped onion
  • 170 ml dry white wine
  • 2 tablespoons of cognac
  • 3 tablespoons of breadcrumbs
  • 2 tablespoons of melted butter
  • 40 g of grated cheese
  • 1 tablespoon of lemon juice
  • salt and pepper


Combine the flour, salt, curry powder and cayenne pepper in a large bowl. Add the Saint Jacques and mix everything well. Melt the butter in a large skillet over medium-high heat, add the shellfish to the butter and sauté until golden brown, about 4 minutes. Transfer the scallops to a plate and cover them to keep them warm. Then add the mushrooms and onions to the pan and sauté over medium-high heat for 4 minutes, stirring frequently.

Pour the dry white wine into the pan, reduce the heat slightly and simmer until the sauce is reduced by half. Remove the pan from the heat and add the cognac and the Saint Jacques. Then, preheat the oven, divide the mixture into 6 portions and put them in the oven. Combine breadcrumbs, melted butter and cheese. Pour the resulting sauce over each portion. Sprinkle with lemon juice and serve immediately!

Ingredients for 4 persons:

  • 4-5 chicory
  • 2 ripe avocados (for the dressing)
  • juice of 1 lemon (for dressing)
  • 250 g peeled shrimp tails
  • 2 grapefruits
  • 3 slices of smoked salmon
  • 2-3 kiwis
  • 6 c. tablespoon olive oil
  • ½ tsp. pink berries
  • salt and pepper
  • dill


To make this mixed salad, cut the avocado in half lengthwise, remove the core and cut the two halves into thin, long slices. Reserve in the lemon juice. Remove the leaves from the endive and always cut them lengthwise, remove the heart with a sharp knife, cut regularly. You can replace the chicory with spinach, arugula or lettuce leaves. Using a saw knife, cut the grapefruits, then the slices of smoked salmon. Rinse and thin the dill. Peel the kiwis and cut them into slices.

Then prepare the sauce with the lemon juice with the avocados. Pour in a little olive oil and season with salt and pepper. Finally, all you have to do is dress the avocado slices, endives, grapefruit quarters, shrimps, salmon strips and kiwis on the plates. Add the stripped dill, the sauce and sprinkle it all with a few pink berries. Salt, pepper and enjoy immediately!

• 400 g of puff pastry

A classic New Year's meal idea that is sure to please everyone. In a large saucepan, brown the deer fillet! Salt and pepper and let it cool for a few moments! Meanwhile, on your well floured work surface, spread the puff pastry. Then place the cooked meat in it, wrap it all up without forgetting to pinch the edges of the dough to seal them! Dress your baking sheet with baking paper and place the crusted doe fillet on it. Just before putting it in the oven for 20 minutes, don't forget to brush it well with an egg yolk. While you wait, you can cut the two types of mushrooms, mince the shallot and chop the parsley. Finally, put everything in a pan and sauté for 5/10 minutes. Pepper, salt and enjoy as an accompaniment! On the advice side:swap the doe fillet for a beef fillet and serve it with a good glass of bordeaux!

  • 4 chicken thighs

  • 300 ml. chicken broth

  • 2 tbsp. tablespoon of liquid cream

In terms of preparation, you should first flour the chicken thighs before browning them for 10 minutes in olive oil. Then prepare the chicken broth and just before boiling pour in the tomato paste. In the saucepan, brown the chopped onion, sprinkled with cocoa, cinnamon and sugar. Add the broth and the chicken thighs. Leave everything for 20 minutes on low heat. Then add the cream, letting it thicken for 2 minutes. Garnish with a few slices of red orange and serve immediately. By the way, this New Year's meal idea is just as delicious made with stuffed turkey!

Dessert is certainly the most awaited moment of a festive meal. We therefore offer you something lighter and more refined than the traditional chocolate cake.

Ingredients for 10 people:

  • 5 oranges
  • 200 ml orange juice
  • 400 ml of rosé Champagne
  • 1.5 gelatin sheets
  • 40 g sugar (your choice)

Peel the oranges and peel each slice raw using a sharp knife. Let the quarters dry on a tea towel. Soak the gelatin sheet in cold water, then drain it and put it in a little orange juice.
