Vietnamese spring roll recipe

Are you looking for a splendid and fresh idea for an aperitif with which you will leave those around the table speechless? Don't panic because you've come to the right place! Let's start with the traditional Vietnamese spring roll, the preparation of which will require the following ingredients:
- 60 gr of rice vermicelli
- 8 rice cakes
- 8 large cooked shrimp - peeled and halved
- 1 ⅓ tablespoon of fresh Thai basil, chopped
- 3 tablespoons chopped fresh mint leaves
- 3 tablespoons of chopped fresh cilantro
- 2 lettuce leaves, chopped
- 4 teaspoons of fish sauce (Nuoc-mâm)
- ¼ cup of water
- 2 tablespoons of fresh lime juice
- 1 garlic clove, minced
- 2 tablespoons of white sugar
- ½ teaspoon of chili garlic sauce
- 3 tablespoons of hoisin sauce
- 1 teaspoon finely chopped peanuts

Preparation steps:
1. Bring a medium pot of water to a boil. Boil the rice vermicelli in it for 3-5 minutes until al dente and drain.
2. Fill a large, flat container with warm / hot water and soak a rice cake in it until softened. Then lay it flat to assemble the stuffing. Start by placing two halves of shrimp in the center followed by a handful of vermicelli. Next, sprinkle with basil, mint, cilantro and lettuce. Take into account that all the ingredients must be located in the circle of the pancake. Close the roll and folding the sides inward. Do the same with the necessary ingredients.
3. In a small bowl, combine the fish sauce, water, lime juice, garlic, sugar and chili sauce.
4. Prepare the second sauce by mixing the peanuts with the hoisin.
5. Serve both sauces as an accompaniment to your spring rolls.
Garlic Chicken Spring Roll Recipe

Ingredients needed:
- 1 boneless, skinless chicken breast, cut into thin slices
- 3 tablespoons of vegetable oil
- 5 tablespoons of soy sauce
- 4 teaspoons of toasted sesame oil
- 3 garlic cloves, minced
- 6 rice cakes
- 1 cup cooked rice noodles
- 2 carrots, julienned
- 2 cups of spinach
- 1/2 cup coarsely chopped fresh cilantro
- 1 teaspoon of brown sugar
- 2 tablespoons of fresh lime juice
- 2 green onions, thinly sliced

Instructions:
1. Combine the following ingredients in a bowl: chicken, vegetable oil, 2 tablespoons soy sauce, 2 teaspoons sesame oil and chopped garlic. Stir to coat the chicken well and marinate in the fridge for 20 minutes.
2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook on both sides for about 5 minutes. Remove from the heat.
3. Fill a shallow plate with lukewarm water. Soak a rice cake in it until softened (5-10 seconds).
4. Then place it carefully on a flat surface and add the rice vermicelli, chicken, spinach, carrots and coriander, placing them in the center of the cake.
5. Fold both ends to the center to create a roll. Be careful not to tear the sheet.
6. Continue until all the ingredients are used up.
7. To prepare the dip, combine the following ingredients: 3 tablespoons soy sauce, 2 teaspoons sesame oil, brown sugar, lime juice and green onions. Whisk to combine well.
Fresh spring rolls with peanut dip

The ingredients to get for the sauce:
- 1/4 cup smooth peanut butter
- 1 tablespoon of hoisin sauce
- 2 teaspoons of soy sauce
- 1 garlic clove, crushed
- 1 teaspoon of Sriracha sauce
- 1 - 2 tablespoons of lukewarm water or more, as needed
- Optional garnish: crushed peanuts, crushed red pepper
Ingredients for spring rolls:
- 10 rice cakes
- 1 large carrot, peeled and cut into julienne
- 1 large cucumber, cut into julienne
- 1/2 large red pepper, cut into julienne
- 1/3 cup chopped purple cabbage
- 30 gr of cooked rice noodles or rice vermicelli
- 1 avocado sliced
- Handful of fresh coriander (or mint, basil)
- 5 large green lettuce leaves, halved
- 20 medium cooked shrimp, peeled and cut in half lengthwise
- Sesame seeds (optional)

Preparation of the dip:
To prepare the dip, just combine all the ingredients. You can use either a food processor or a large mixing bowl to do this. Whisk / blend until smooth. If necessary, pour 1-2 tablespoons of lukewarm water. Transfer the mixture to a serving bowl.
Preparation of spring rolls:
Pour lukewarm water into a large, shallow bowl and soak one rice cake at a time, following the package directions. Then place it on a flat surface. Then, assemble the stuffing by first placing a few carrot sticks. Follow with the cucumber, red pepper, a pinch of purple cabbage, a small amount of noodles (or vermicelli), 1-2 slices of avocado and a little cilantro. Place lettuce on top, followed by 4 slices of shrimp. Fold the ends towards the center and roll tightly. Sprinkle sesame seeds on your spring rolls and serve with the peanut dip.
Vegetarian spring roll with tofu

Ingredients for spring rolls:
- 1 1/2 cup julienned vegetables (carrots, red pepper, cucumber)
- 1 bunch of fresh coriander
- 1 bunch of fresh mint
- 115 gr of vermicelli or rice noodles
- 8-10 rice cakes
For the almond butter dip:
- 1/3 cup creamy salted almond butter
- 1 tablespoon of reduced sodium soy sauce
- 1-2 tablespoons of brown sugar
- 1 tablespoon of fresh lime juice
- 1/2 teaspoon garlic and chili sauce
- Hot water
For the tofu:
- 220 gr extra-firm tofu (drained, carefully dried and cut into small triangles)
- 4 tablespoons of sesame oil
- 3 tablespoons of cornstarch
- 2 1/2 tablespoons almond butter dip
- 1 tablespoon of reduced sodium soy sauce
- 1 tablespoon of brown sugar

Preparation steps:
1. Start by preparing the rice noodles according to the manufacturer's instructions.
2. Meanwhile, heat a large skillet over medium heat and add the tofu pieces. Stir in 3 tbsp. cornstarch and about 3 tbsp. of sesame oil. Fry on both sides for about 5 minutes. Remove from the heat and set aside.
3. Prepare the sauce by mixing all the ingredients except the water. Stir to combine well. Finally, add a little hot water to slightly dilute the dip.
4. To add flavor to the tofu, combine the following ingredients in a separate bowl: 2.5 tbsp almond butter dip, 1 tbsp. tablespoon soy sauce, 1 tbsp. sesame oil and 1 tbsp. brown sugar. Stir well.

5. Return the tofu to the pan over medium heat and pour in the sauce you just made. Stir to coat well and cook until sauce is well absorbed. Remember to stir frequently.
6. Pour hot water into a shallow plate and submerge one rice cake at a time for about 10-15 minutes.
7. Transfer it to a damp surface, spreading it out so that it forms a circle.
8. Add a handful of vermicelli (or noodles) and proceed with the carrots, cucumber, herbs and tofu. Finally, wrap and serve your spring rolls with almond butter dip.
Salmon spring roll

Ingredients needed:
- 55 g cooked rice vermicelli
- 8 rice cakes
- 56 g of pea shoots
- 340 g grilled skinless salmon fillet
- Green onions, diced
- 24 sprigs of coriander
Instructions:
Fill a shallow plate with water and soak the patties (one at a time) in it. Then transfer a patty to a damp surface and assemble the stuffing. Start by adding a small amount of pea shoots and continue with a little cooked vermicelli, salmon, onion and cilantro. Fold, roll up and enjoy!
