Instructions

- Preheat the oven to 180˚C and line a round tray 20 to 23 cm diagonally with parchment paper. Put aside.
- Beat sugar, orange zest and eggs together in a stand mixer on medium speed until pale yellow, about 1 minute. If you don't have a stand mixer, you can also do this by hand with a whisk!
- Run the blender at medium low speed, slowly flowing in the olive oil to emulsify. Make sure to go slowly to prevent the dough from splitting! Add the vanilla extract and mix well.
- Add the dry ingredients (all-purpose flour, almond flour, baking powder and salt) and stir until combined. Don't overdo it. Finally, gently fold in the berries.

First, for the cake:
• 1 ¼ cup extra virgin olive oil and more for the pan
• 1 cup of granulated sugar and more for the pan
• 3 large eggs
• 2 tablespoons of freshly grated orange zest
• 1 tablespoon of freshly grated lemon zest
• 2 teaspoons of almond extract
• 2 cups of cake flour
• 1/3 cup ground almonds
• 2 teaspoons of yeast
• ½ teaspoon of baking soda
• ½ teaspoon of salt
• 3 tablespoons of freshly squeezed orange juice (from a large orange)
• 3 tablespoons of freshly squeezed lemon juice (from 2 medium lemons)
For the toping you need:
• 2 tablespoons of powdered sugar
• 1 teaspoon of orange zest
• 2 tablespoons of powdered sugar, for serving
Follow the directions:

- First, preheat the oven to 180˚C and line a 23 cm diagonal round cake pan with parchment paper. Coat the inside with olive oil with your hands or with a paper towel. Then sprinkle with granulated sugar and pat to coat the inside of the pan, shaking off any excess sugar.
- Beat eggs, sugar, orange zest and lemon zest in a large mixing bowl with a hand mixer, until the mixture is pale yellow, thick and does not stick, 3 to 5 minutes. Gradually add the olive oil on the highest speed, running it slowly over the edge of your bowl, until the mixture is thick and the olive oil is completely incorporated. Add the almond extract.
- Separately, in a medium bowl, whisk to combine the cake flour, almond flour, baking powder, baking soda and salt.
- Add 1/3 of the dry ingredients to the bowl with the wet ingredients and beat until combined. Stir in the lemon juice, then 1/3 of the dry ingredients. Add the orange juice, then the remaining dry ingredients until combined.
- Transfer the dough to the prepared cake pan. In a small bowl, combine the sugar and orange zest to garnish the cake. Using your fingertips, rub the orange zest into the sugar to release the essential oils. Sprinkle the mixture evenly over the top of the cake.
- Place in the oven to bake, 45 to 55 minutes, until the cake is golden and a toothpick inserted in the center of the cake comes out clean. Let cool completely before sprinkling with powdered sugar.
