Starting from the ingredients, you will need: ½ kilo of salmon, 3 tablespoons of melted butter. The magic is hidden in the combination of a few spices: 1 tsp. to s. lemon pepper, 1 tbsp. seasoned salt, 1 ½ tbsp. smoked paprika, 1 teaspoon, ½ tsp ½ tsp ground white pepper ground black pepper, ¼ tsp of ancho chili powder. Don't forget the olive oil cooking spray, a few quarters of lemon and several sprigs of fresh dill.
A little more patience because for the creamy cucumber and dill sauce you must include:
- ½ medium cucumber, seeded and finely diced
- ¼ cup sour cream
- ¼ cup of mayonnaise
- 2 teaspoons of dry dill
- 1 teaspoon minced garlic
- The juice of ½ lemon
- salt and pepper to taste
How do we do it?

First, brush the salmon fillets with the melted butter and season them lightly with lemon pepper and seasoned salt to taste. Then, using a medium-sized bowl, combine the 10 ingredients (spices and herbs). Rub the seasoning liberally on the bare side of the salmon and lightly on the bottom where the skin is. Refrigerate for about an hour.
Second, while the salmon is cooling, combine the cucumber, sour cream, mayonnaise, dry dill, minced garlic, lemon juice, salt and pepper in a small bowl. Then, chill the creamy cucumber and dill sauce in the refrigerator until ready to serve.
Third, preheat your smokeless indoor grill and spray a light coating of olive oil. Then place the salmon on the grill, skin side down, for about five to eight minutes. Then turn over and cook for the same amount of time until internal temperature reaches 60igneC.
Finally, remove from the grill and serve immediately with the creamy cucumber and dill sauce, decorated with a sprig of dill and a quarter of lemon.
Replace lemon wedges with lime slices

As a first activity, cut the skirt steak crosswise into three equal portions. Then, in a large bowl, whisk together the teriyaki sauce, garlic, ginger, sliced green onions and lime.
Second, dip the steak in the marinade until it is completely coated. Then cover the bowl with plastic wrap and refrigerate for at least 30 minutes. Once the meat is marinated, preheat your smokeless indoor grill and coat the surface with extra virgin olive oil.
Third, when the grill is hot, remove the pieces of meat from the marinade and place them on the grill. Then season everything with salt and pepper to taste and grill for about three minutes on each side for medium rare cooking. To cook it well, it takes five to six minutes per side.
Finally, remove the steak from the grill and transfer it to a cutting board. Cover it with aluminum foil and let it cool for three to five minutes. Before serving, cut the steak across the grain into thin strips, garnish with sesame seeds and… voila!
You can replace the skirt steak with another piece of meat

If you feel like it, replace the skirt steak with another piece of meat, such as sirloin. However, since teriyaki sauce serves as a tenderizer, there's no need to splurge on more expensive cuts such as rib eye. Also, if you don't have fresh ginger, you can substitute one teaspoon of ground ginger for the two tablespoons of fresh ginger called for in the recipe.
Finally, the cooking time will vary depending on the thickness of the steak.
Grilled Honey Lime Chicken

It is true that chicken meat is popular with everyone because the lack of fat makes it light and easily digested. Surely, your friends and family will love this flavorful recipe. Two and a half kilograms of chicken thighs are sufficient with chopped cilantro, for garnish. As for the brine, you need 12 cups of water, ½ cup of salt, ¼ cup of sugar. But there is also the frosting which requires 1 ½ cup of honey, ½ cup of lime juice, ¼ cup of soy sauce, 2 tablespoons of vegetable oil, 2 cloves of minced garlic, 1 tablespoon of fresh grated ginger, 1 teaspoon of dried crushed red pepper and ½ teaspoon of salt.
How to proceed ?

While the chicken should remain in the brine for a while, place it in several resealable plastic bags, 4l each. Then, in a large bowl, combine the water, salt and sugar to make the brine. Stir the mixture well until the salt and sugar dissolve completely. Next, pour the brine over the chicken and remove the air from the bags before sealing them, making sure the chicken is completely submerged. Refrigerate for at least two hours.
Your third step will be to preheat the smokeless indoor grill. Meanwhile, combine the frosting ingredients in a medium bowl and reserve half to serve with the grilled chicken.
When you grill the chicken, skin side down, for about 10 minutes, you can flip it regularly for another 10 more minutes. Then generously brush the top of the chicken with the frosting and grill, skin side down, for five minutes.
Finally, flip the chicken, brush with the frosting and cook for about five more minutes until the internal temperature reaches 70˚C. Remove from the grill and serve with the reserved sauce. Cilantro for spice.
Refrigerate the chicken and brine mixture overnight
We recommend that you refrigerate the chicken and brine mixture overnight. If you don't have fresh ginger, you can use ½ teaspoon of dried ginger as a substitute.

Finally, remove the watermelon from the grill, garnish with the mint chiffonade and serve.
