Layered festive "Mimosa" salad with tuna - another Russian starter recipe to spice up
To bring some diversity to the Christmas menu this year, we take another layered salad from the festive Russian table.
- 1 onion
- 50 ml of apple cider vinegar
- 50 ml of water
- 4 hard-boiled eggs
- 3-4 cooked potatoes
- 1 tin of tuna
- 3 cooked carrots
- 100 g light mayonnaise
- 1 pinch of sugar
- salt and pepper
- parsley (optional)
- cloves (optional)
- coriander seeds (optional)
- blackberries (optional)
- round ring 20 mm in diameter (or more)
Peel and chop the onion. In a small bowl, combine the vinegar, a little sugar and pepper, the coriander seeds and the cloves. Add the chopped onion and let it marinate for at least 15 minutes. Open the can and drain the tuna. Assemble your layered salad in a large transparent bowl or in a large plate using a round ring. In the first layer, put the drained tuna. Next, lay the cooked and mashed potatoes, followed by a layer of mayonnaise. Spread the pickled onions over the potatoes, then cover with a new layer of mayo.
Take the eggs and separate the yolks from the whites. Grate the whites and spread them over the potatoes and mayo. Grate the cooked carrots and add them to the round ring. Do the same with the egg yolks. These are indeed the last layer of your salad. Finally, gently remove the round ring and decorate according to your taste. Parsley branches, dill sprigs, basil leaves, small green olives, cherry or ripe tomatoes, you are spoiled for choice! Before serving, let the salad cool for a few hours.
Layered fruit salad to finish the festive meal on a fresh note

To change from the traditional overly chocolatey Yule log, why not opt for the fruit salad? So, swap the mayo and vegetables for layers of fresh fruit garnished with crushed cookies and Philadelphia cream and voila! A salad that is beautiful to the eye and good to taste!

- 2 bananas
- 2 cups of seedless green grapes
- 250 g of Philadelphia
- 1/4 cup sugar
