Ingredients for 6 people

  • 150 g of dried fruits (raisins, apricots, figs, candied oranges, candied fruit)
  • 50 g of pecan nuts (cashew nuts, hazelnuts, almonds, pistachios)
  • 60 ml rum
  • 170 g unsalted butter
  • 120 g sugar
  • 1 pinch of salt
  • 3 eggs
  • 1 C. of honey
  • 200 g flour
  • baking powder
  • 50 ml of milk
  • vanilla extract
  • 2 tbsp. tbsp slivered almonds

Preparation:

Rather than adding dried fruits as is to flavor your Christmas cake, take the time to rehydrate them in a little rum the night before. So, put the dried fruits and nuts in a jar filled with rum and let them marinate overnight. To make the liquid penetrate well, mix or shake the jar a few times.

In the morning, leave the butter, egg and milk at room temperature for 30 minutes. Next, cream the butter, then add the sugar, salt, egg, honey and vanilla and mix. Incorporate the flour and baking powder by sifting them over the preparation, then add the milk, fruit, jam and nuts (without the rum). Mix gently. If you like the taste of rum, pour in a teaspoon. Then, butter a cake mold and pour the resulting dough into it. Don't forget to add the flaked almonds. Bake the cake at 180 ° C for 50 minutes. Once out of the oven, coat it with a little rum and let it cool. When ready to serve, garnish with fruit or pecan nuts, as desired.

If you don't like rum too much, you can cover the top of the cake with this syrup! Bring 50 g of homemade orange or apricot jam, 30 g of sugar, 1 tsp. lemon juice and 2 tbsp. tablespoons of water in a saucepan. Let simmer for 5 min, mix, filter and voila!

Ingredients for 1 large cake:

  • 120 g unsalted butter, at room temperature
  • 250-300 g of wheat flour
  • 2 tbsp. of baking powder + 1 tsp. baking soda
  • 4 tbsp. of 4 spices
  • 1 pinch of salt
  • 180 g brown sugar
  • 2 eggs
  • 450g pumpkin puree
  • 3 tbsp. to s. raisins
  • 2 tbsp. to s. dry cranberries
  • 5-6 candied kumquats
  • 2 tbsp. to s. crushed pecans
  • 4-5 tsp. to s. rum

For the icing:

  • 10 c. to s. icing sugar
  • Maple syrup

Preparation:

Start by heating the grapes and rum over low heat. Off the heat, flambé, cover and set aside. Then preheat your oven to 160 ° C. In a small bowl, combine the spices, baking powder, baking soda and a teaspoon of brown sugar. Add the fluid flour and sift. In the bowl of your food processor, put the soft butter and mix first at low speed, then at higher speed until you obtain a creamy consistency. Then add the sugar at a lower speed, beat a few seconds, then increase the speed. Once the sugar is well incorporated, add the egg and beat for 1 minute.

Then add the pumpkin puree at low speed (the recipe here) and a little rum. Keep beating gently. Pour the flour with spices and season with salt. Beat until all the ingredients are well incorporated. If you find the dough a bit too compact, feel free to pour in some milk until you get a smooth but not runny consistency. Then put the dried fruits macerated in rum, the candied fruits and the nuts and mix using a spatula. Pour the dough into a cake mold, buttered and floured beforehand and bake at 160 ° C (rotating heat) for 1 hour. Once baked, take the fruit cake out of the oven and allow it to cool before breaking it down and frosting.

When cooked, take it out of the oven and let it cool in its mold. Once cold, you can take it out of its mold and ice it. To prepare the icing, pour the icing sugar into a bowl and gradually add the maple syrup, mixing well each time until you obtain a creamy preparation. If necessary, add more icing sugar and maple syrup. It's better to have a little more than not enough. Finally, all you have to do is place the cake on a wire rack and frost it. The ideal is to ice it 3-4 hours before eating it.
