Burnt Basque cheesecake - the cheese dessert that conquers the whole world

Although the name gives the impression that this recipe has a long history, Basque Burnt Cheesecake was created in 1990 by chef Santiago Rivera de La Viña in San Sebastian, Spain. According to interviews, Rivera was looking to add a dessert menu to his Pintxos restaurant after taking it over from his parents and he settled for a cream cheese cake.
The original La Viña recipe contains only 5 ingredients: cream cheese, heavy cream, sugar, eggs and flour. Still, there are already quite a few variations that include vanilla, spices, and even fruit. If you're a pro who wants to take the traditional recipe a step further, try the pumpkin cheesecake, for example, which is perfect to sweeten you up on the weekends.
The famous burnt Basque cheesecake recipe
This dessert looks like a traditional Portuguese pastry and some people think it's a Pastéis de Nata, but in an XXL version. In reality, it has nothing to do with it. So, without further ado, here is the list with the necessary ingredients for 6 people:
- 226 g cream cheese (cold)
- 1 cup heavy cream (cold)
- 100 g granulated sugar
- 2 large eggs (cold)
- 15 g cake flour
- 1/2 tsp. vanilla extract
Preparation:
1. Preheat the oven to 230˚C.
2. Line an 8-inch (8-inch) snap-fit pan with parchment paper. You can use the bottom to press the paper into the mold. Then you can use your hands to crumple the sides to maintain its shape. Once the paper is molded on the tray, you can remove the bottom and paper, then reattach the bottom to the tray, placing the paper on top.
3. Add all the ingredients to a blender and mix them until smooth. You can let the mixture sit for about 20 minutes so that the air bubbles in the dough have time to settle, but you can cook it right away if you're pressed for time.
4. Pour the mixture into the prepared cake pan, then place the pan a few times on a kitchen towel to release any remaining bubbles from the dough.
5. Bake the cheesecake at 230˚C until the top is just ready to turn black. It takes about 20 minutes. The cake should still be shaken a lot in the center when you remove it from the oven.
6. Let the burnt Basque cheesecake cool on a wire rack. Then, place it in a resealable bag and put it in the fridge overnight.

At the start of cooking, the cheesecake will double its volume. Afterwards, it will fall and it is quite normal! So, don't panic! Cracks on the top of a burnt Basque cheesecake are absolutely common. Plus, it gives the dessert an even more rustic feel. However, if you want to avoid them, increase the temperature of your oven so that the top browns more quickly and the cooking takes less time.
This cheesecake can also be eaten at room temperature, unlike its American cousin. Please note that in this case it will be more or less liquid. So take a teaspoon instead of a fork.
If the temperature is too low, the cake will bake completely before the top takes on enough color, and if the temperature is too high, the top will turn to carbon before the center has a chance to thicken up. the desired consistency.
To slice the cooled Basque cheesecake, prepare a long, sharp knife and a pot of boiling water. Clean and heat the knife with hot water between each slice. This will give you nice slices.
